Organic Roast Pumpkin is one of the easiest and delicious meal to make. It is also great as you can make bulk for the whole week and put it in the fridge to eat when wanted.
1 Whole Organic/Chemical free Pumpkin (you can use ones which have been sprayed with chemicals, but then I would recommend peeling the skin off. There is also negative health impacts of using them anyway as our body is not used to the new man made chemical compounds)
Healthy drizzle of Olive Oil
Pinch of Himalayan salt
Pinch of Pepper (freshly ground in mortar and pestle for the best flavour)
1.Preheat oven to 220 degrees Celcius
2. Wash Pumpkin
3. Roughly chop without removing seeds or skin
4. Drizzle a healthy amount of olive oil into a baking tray and place pumpkin into it.
5. Season with salt and pepper and anything else you want to (chillies, cumin, coriander seeds etc.)
6. Bake for 30-40 mins, check with fork, if soft, they are ready. Turn off oven, you can leave them in until the oven cools down, but it is best to open the oven to let the humidity out, preventing pumpkin from become wet.
